Shrimp Tacos with Fresh Tomato Salsa

It is a wonderful combination to have shrimp and green beans tossed with some Persian seasoning that each kadbanoo finds in her kitchen. A blend of chilies, and thyme and ginger and cloves of garlic with some cinnamon sprinkles will make any dish taste wonderfully yummy. In today's recipe I will show you how to make this easy dish for any afternoon party or family gathering.

Start to finish time is 35 minutes, we need the oven of 350F

Ingredients:
8 6-inch corn tortillas
1 bottle of fresh organic salsa
8 oz. fresh green beans, trimmed and halved crosswise
One pound of large peeled shrimp
One-tablespoon olive oil

Preparation:
Preheat your oven to 350F, then wrap tortillas in heavy foil and heat in preheated oven 10 minutes. Meanwhile prepare fresh tomato salsa and put it aside for later on.

How to Make the Salsa:
In a bowl combine one cup chopped seeded tomatoes, and one cup of chopped seeded cucumbers, with 1/3 cup thinly sliced green onions, one cup snipped fresh cilantro, 3 tbsp lime juice and one tsp. salt, and one tbsp. rice vinegar. If you'd like to add some heat, you can use some chopped chilies, green pepper, or crushed red pepper.

In a bowl toss beans with one teaspoon of above seasoning of thyme, garlic cloves, cinnamon, chilies and powdered ginger, and in one other bowl toss the shrimp with some more of this seasoning. Heat oil in large skillet over medium high heat. Add green beans and cook and stir for 3 minutes. Add shrimp to the skillet and stir for 3 more minutes, until its colors changes to orange brown.

To serve, fill each warm tortilla with 1/3 cup shrimp and green bean mixture. And serve with your homemade salsa. You also can serve your shrimp on endive leaves. In a big platter, arrange your endive leaves and in each one pour some shrimp and chopped chives and create a mixture of sour cream and fresh white yogurt and chopped parsley and pour over the shrimp and serve as a healthy snack with your party drinks and chips.

Since the weather has been so cold, we also can warm up some chicken broth and add one pound of peeled shrimp and some chopped parsley and chopped celeries to this combination and let it simmer then add half a cup orzo for instant shrimp soup. You can add some lime juice to your pot along with some ground garlic. Let this simmer for about half an hour, and then serve with warm crispy tortillas.

Winter is a good time to relax in the kitchen by cooking and enjoying some red wine and good music while your meal is getting ready. I hope you enjoy cooking these recipes as I did.
