From Victoria's Kitchen... Potato Patties
It is that time of the year that everyone is not in the mood for making a huge meal for dinner. The weather is cold out there and all you need is a quick fix-up to warm up the inside atmosphere and not do much for it. I have a fun recipe here that will need few ingredients and you can prepare it in less than 30 minutes. I hope you enjoy it.
Serves 4
Ingredients
3 medium-sized potatoes
2 large eggs
½ cup bread crumbs
A punch each of salt, turmeric, and black pepper
Vegetable oil (I rather use grape oil, but you can even use butter if you like.)
Some people like to add a pinch of dried herbs or parsley to this mixture. It is totally optional and honestly if you do, it adds flavor to the food and fragrance to the kitchen.
Directions
In a large pot, boil some water and toss the potatoes in it and add some salt. Let the potatoes cook completely. After 15 minutes, rinse the pot and take the skin off the potatoes. Then when they cool down, grind them in a bowl; making a puree mixture. Then, add the eggs and the rest of the items to the bowl. You can add your herbs now, if you like or even chopped red bell pepper.
I rather keep it simple. If the mixture is too watery and loose, add 2 tablespoons of flour and mix the ingredients well.
How to make the patties:
In a separate pan, add your oil, let it get hot for one minute or so. Then, take with a big spoon of your choice, some of the mixture, form it in a circled shape and lay it in the hot oil. You can add 4 spoons of mixture to the pan and let them fry for 6 minutes on each side. Remove when completely brown and crispy and lay them on a paper towel in a plate to remove the excessive oil.
Warm up some pita or rolls. Chop some lettuce, tomatoes, and cucumber pickles. Let your loved ones make their own homemade sandwiches. Pour some fresh orange juice for each person and enjoy this meal with your family.
