Ingredients:

Homemade blueberry jam, one medium size jar, or the jams you buy from the market can do it

2 large organic eggs

One cup regular white sugar

2 full cups of enriched white flour

2 tablespoons baking powder

Pinch of salt

A full cup of 2% milk ( you can use one- half cup of half and half if milk is not available, some like to use one can of condensed milk)

Half a cup of cooking oil

Some lemon zest 

A large Pyrex dish

Some chopped red apples for  garnish

Raspberry Ice-cream for the finishing touch (optional)

 

Directions:

In a big bowl, mix all the ingredients together. Let them sit for 10 minutes at room temperature. Use a brush and make the Pyrex dish greasy with some oil. You can use melted butter if you like. Then pour the mixture in the Pyrex dish. Decorate the top with chopped apples. Transfer the dish to the oven, bake for 45 minutes at 350 degrees. Penetrate the cake with the fork.  If it comes out clean, then the cake is ready. Take it out of the oven; let it rest for 30 minutes before carving and slicing. You can place some vanilla or raspberry ice cream next to your cake slice.
