From Victoria's Kitchen... Gnocchi with Veggies
Serves 4
It takes 10 minutes to prepare the ingredients and probably 35 minutes to put it all together. For all the working adults, it is so hard to make dinner these days. By the time we get home we are so tired to even think of fixing something colorful and healthy for the family. Here I have gathered a nice fresh recipe that will make you shine no matter how limited your time would be. You still will find time to relax and take care of so many things before you set the table. I am sure a nice house-wife will always find time to make a quick salad bowl to goes with her dinner dish.
Here we go with the recipe then, are you ready? Then as always, put on your nice clean aprons, set the music, and let’s keep on cooking ladies.
Ingredients:
One small size cauliflower cut into small florets (You can use zucchini, or tomatoes.)
Some sage leaves and some garlic powder
Some chopped cilantro
Some olive oil or grape oil
Salt and pepper
One pound Gnocchi (fresh or frozen does not matter)
¼ cup grated parmesan cheese
Chopped black olives (optional)
Directions:
Heat the oven to 350 degree F. On a rimmed baking sheet, toss the cauliflower florets (or any veggie you might have) sage, cilantro, salt and pepper. Roast (turning once) until the cauliflower gets a bit soft and golden brown. Once it is tender, take it out of the oven. It might take 20-30 minutes to make it ready.
10 minutes before your cauliflower is finished, cook the gnocchi according to the package directions. Once cooked, in a huge bowl, toss your gnocchi and pour over the cauliflower florets, and top with parmesan cheese. Add the parmesan when everyone is ready to eat because it easily melts on your dish and some people might not like it so cheesy. Add olives too.
I have some friends who like to add roasted tomatoes to this dish; everything is totally up to the cook. Do whatever you like and enjoy some quality time with your family. This dish goes well with grape juice or any types of red wine.
